Cherry Cobbler For Two


     I really love cooking in my 8 inch dutch oven, not only is it lighter to carry, uses fewer coals and is easier to clean but I am always amazed by how efficiently it bakes for it's smaller size.  To honor the Father of our Country's birthday I decided to bake a scaled back version of a cherry cobbler/dump cake.  Oil your oven well, dump in the pie filling, sprinkle with the cake mix, pour over the soda, pat with butter and bake.  I placed 8 coals in a ring around the base of the oven, 10 coals around the rim of the lid and two in the center.  In about 40 minutes the cherries were bubbling away and the cake was puffy and golden.  Celebrate George Washington's big day with this sweet and classic dutch oven dessert.

Cherry Cobbler for Two
1 21 oz. can cherry pie filling
1 9 oz. package yellow cake mix (I used Jiffy brand)
3/4 cup raspberry ginger ale
3-4 Tblsp butter, cut into 7 or 8 slices

     Lightly oil or spray 8 inch dutch oven.
     Spread pie filling in prepared oven.
     Sprinkle cake mix evenly over pie filling.
     Pour ginger ale over cake mix, covering completely.
     Dot with butter.
     Bake at 350 degrees for 35-40 minutes or until top is lightly browned and pie filling is bubbling.
     Makes 2 to 4 servings.

  2. That looks really good! I like using my 8 inch oven as well. It is just the right size for a couple of people. Cooks faster too!

  4. Liddy, made this up last night, with my usual small variation of course. Made this in a 12" oven using 2 21oz cans of cherry pie filling, 15oz box of yellow cake mix, 8oz of regular gingerale (I can't find raspberry gingerale anywhere) and 3/4 stick butter sliced into thin pats. Baked for 40 minutes with 12 coals in a ring underneath and 24 on top. At the 40 minute mark I took all the bottom coals and placed them on top for the last 5 minutes to finish browning the top. Multiple thumbs up from my taste testers.

    Here's a question for you and anyone else reading this...does Jiffy cake mix cook up differently than Betty Crocker Super Moist cake mix? I thought as a topping variation about using 2 9oz boxes of Jiffy yellow mix, 12oz of gingerale and 3/4 to 1 stick of butter. Haven't tried it, but in theory it sounds good.

    1. You should try heating the cheeries first an covering the bottom of the over with tad of cake mix pour your cherries in an then put the rest of the cake on top with your butter as before.

  5. Sounds great K.C., good to know you can double the recipe with such good results. Yes, I think two Jiffy mixes would roughly be the equivalent of one large cake mix so you would probably be safe substituting in a dump cake recipe. Thanks for the feedback, Liddy
