When I saw this BLT Pie from Betty Crocker I put it at the top of my list of recipes to try in my dutch oven. It's like a BLT all rolled into a quiche-like Bisquick Pie. The recipe calls for it to be baked in a 9 inch pie plate. Therein lies the dilemma, do you make it in your 10 inch oven and settle for it being a little thinner and cooking in less time or do you try it in your 8 inch oven, cooking it a bit longer and taking the chance of it rising too high and burning on the top? I opted for my 10 inch oven and baked it with 8 coals in a circle around the bottom and 22 on the lid. Let it sit for a few minutes then slather wedges of the warm pie with mayonnaise and sprinkle with tomato and lettuce. This is really a treat, if you're a BLT fanatic you're bound to love this warm, cheesy pie.
Impossibly Easy BLT Pie
12 slices bacon, crisply cooked, crumbled
1 cup shredded Swiss or Cheddar cheese (4 oz)
1/2 cup Bisquick mix
1/3 cup mayonnaise or salad dressing
3/4 cup milk
1/8 teaspoon pepper
2 eggs
3 tablespoons mayonnaise or salad dressing
1 cup shredded lettuce
6 thin slices tomato or one medium tomato, chopped
Lightly oil or spray a 10 inch dutch oven.
Layer crumbled bacon and cheese in bottom of oven.
In medium bowl, stir Bisquick mix, 1/3 cup mayonnaise, milk, pepper and eggs with wire whisk until blended. Pour into oven.
Bake for 25 minutes at 400 degrees or until top is golden brown and knife inserted in center comes out clean. Let stand for 5 minutes before serving. Spread 3 tablespoons mayonnaise over top of pie. Sprinkle with lettuce and tomato. Makes 4-6 servings.
